Summer Vegetable Casserole

Ingredients:

2 yellow squash

2 zucchini

6 medium peeled potatoes

1 large onion

1 lemon zest

4 Tblsp olive oil

4-6 tomatoes diced

2 oz feta cheese

1 1/2 tsp seasoning salt & pepper

Directions:

Preheat oven to 375 degrees.  Cut potatoes int 1/8 inch thick slices and all other vegetables int 1/4 inch slices in a bowl, mix all vegetables except tomatoes and lemon zest,  3 Tblsp olive oil, seasoning salt, and pepper.  Place in 9 x 13 inch casserole dish.  Top with tomato slices and crumbled feta and drizzle with 1 Tblsp olive oil.  Cover tightly with foil and bake for 1 hour.  Remove foil and cool another 10 to 15 minutes.
